One last drink
There are two ways to do the last drink. If you want to keep chatting, look for a small cocktail bar or a jazz bar: they usually stay open until 1 or 2 am and get calmer the later it gets. If you'd rather stretch the night, the DJ bars in the city centre close later and lead on to the clubs. Outside the capital almost everything closes before 1 am, so don't leave it too late. Keep a taxi number handy for the way back: there are no buses at that hour and in high season you'll have to wait.
