Platja de Muro's Michelin-starred restaurant, on Avinguda de s'Albufera

On Avinguda de s'Albufera, among hotels and beach shops, sits one of the most ambitious kitchens in northern Mallorca: Fusion19 won its first Michelin star in 2023 and also holds a Repsol Sun. Two young chefs, Marc Marsol and Aleix Serra, run the kitchen, and the dining room is led by sommelier Arantxa Calonge. There is only a tasting menu, in two versions — Esencia (€150) and Plenitud (€180), with optional wine pairing — which change with the seasons and rest on three ideas: Mallorcan produce, home-grown or from island producers; the memory of traditional cooking; and influences from other cuisines, from the Mediterranean to Asia and the Middle East. It's a long run of small courses, some a single bite, with ageing, smoking and tableware designed for each dish. The one people remember most is an ensaïmada made with porc negre (Mallorcan black pig), and the sequence plays at evoking the island's landscapes, from the salty air of the coves to the resin of the pine woods. The dining room is intimate, set between two wine cellars holding more than 1,200 labels, and Mallorcan wines feature strongly in the pairing. This is demanding, expensive chef's cooking for a special occasion. One useful detail: Gran Café 1919, the neighbouring place on the same street, serves sushi and burgers and is a separate business, though the two are often confused.
