Calvià vila, the village that gives the municipality its name, sits inland and most people drive straight past it on the way to Palmanova or Santa Ponça. On its Carrer Major, this mesón runs on word of mouth and is run by a family who split themselves between the grill and the dining room. The decor is part of the visit: walls crammed with memorabilia, mounted hunting trophies, nods to cycling and a fireplace for winter. If taxidermy bothers you, it’s worth knowing before you walk in. You come here for wood-grilled meat and old-school Mallorcan cooking. The dish most tables order is the suckling pig, tender inside with crackling skin; after that, frit mallorquí (a fry-up of offal, potatoes and peppers), pork loin with cabbage and lamb chops with real wood-smoke flavour. To start, tripe, meatballs and toasted bread with aioli, which hardly anyone skips. Desserts are homemade: crema catalana, rice pudding, cheesecake. Portions are generous and the mood is a village dining room, full of groups and families at weekends. For fish or a light meal, head to the coast. In summer you eat on the sloping street terrace; when it’s cooler, the room inside is the point.
