Rosevelvet opened in 2014 as a neighbourhood café — good coffee, breakfasts, homemade cakes — and over the years the bread took over. Today its bakery on Carrer de Can Maçanet works only with sourdough and long processes, which the house spells out almost like a recipe: twelve hours to refresh the starter, fermentations of up to half a day, croissants laminated in three turns and proofed overnight, focaccias fermented for 12 to 18 hours. The counter is ruled by the loaves — the Rosevelvet, rye, seeded and wholemeal — plus a gluten-free bread and a vegan sandwich loaf for those who need them. In the pastry case, what sets it apart from an ordinary bakery are the almond croissant, the cinnamon roll, the cardamom bun and the New York-style pistachio and Lotus cubes. You can have a specialty coffee with them. The bakery also supplies restaurants, boutique hotels, cafés and yachts, so its bread may well turn up on other tables in Palma. For a sit-down brunch with a kitchen menu, the house has a second address, Rosevelvet Eatery, on Carrer de Font i Monteros.
