The Flexas opened in 1944 on Carrer de la Llotgeta in Canamunt, and since 2004 it has been run by three partners – Pepa 'la Terre', Fernando Estrella of the theatre company Peor Impossible, and Xavier Aloy – who reopened it when this part of the old town was still the red-light district. Today it's one of Palma's bars with the most character: retro, kitsch décor, toilets people talk about, a mix of neighbours, arts people and visitors, and an atmosphere that starts as a tapas bar and ends, late at night, as a place for the first drinks of the evening. The menu is chalked on a board that travels from table to table, and the kitchen blends Mallorcan cooking with nods to elsewhere. The dishes that define the place are dim sum filled with sopes mallorquines, frita of cuttlefish with sobrassada, toasts with sobrassada and camaiot, and smoked sardine with Iberian pancetta on country bread; if you're hungrier, pork cheek in fortified wine or a pork cachopo with cecina and Mahón cheese. For vermouth, which is almost an institution here, gildas and liver banderillas Sa Pobla-style. For dessert, flaó or stout cake. Everything is for sharing; portions aren't large for the price and, when the bar is full, the kitchen moves at its own pace. It celebrates its anniversary every year, and the night of Sant Sebastià.
