One idea, taken a long way: Spanish potato tortilla, in many versions. La Tortillería de Palma is a small bar on Plaça de la Quartera in the old town, with a covered porch on the street, and it splits its menu into 'local' tortillas, the permanent ones, and 'visitors', which change from day to day; there's also a tortilla of the week. Among the regulars, the most ordered are truffle, mojo picón (Canarian red pepper sauce), Galician-style octopus and the Baleárica, with sobrassada, Mahón cheese and honey; goat's cheese with piquillo pepper is another safe bet. The practical choice is the selection of six pieces of your choice, served with pa amb tomàquet, which is enough dinner for two. There are always two or three vegan tortillas, and more if you let them know in advance; for coeliacs there's gluten-free beer and rice cakes instead of bread. Before the tortilla, the house pâtés: sun-dried tomato is the favourite, alongside olive tapenade, salmon with pistachio and hummus. Afterwards, the brownie and a shot of coffee liqueur. To drink, draught beer, vermouth, jugs of tinto de verano and even kalimotxo, at some of the lowest prices in the centre. The very runny tortilla style doesn't win everyone over.
