Bishop Wine Studio
Mallorcan wine explained glass by glass in a tiny bar near La Llotja.
View in the app · free, no sign-upBehind an unassuming door on Carrer de Vallseca, in the Llotja quarter, is a small whitewashed room lit by candles, with space for only a handful of people — you end up chatting to whoever is next to you. Bishop Wine Studio is a family-run wine and cocktail bar, staffed by its owners, who also run a wine and spirits shop, and it shows at the bar: talk drifts from island wineries to where you should eat tomorrow.
It has two sides. One is wine: bottles from Mallorca and beyond, by the glass or bottle, plus small-group tastings of local wine — a flight of Mallorcan wineries explained glass by glass, aimed at people who arrive knowing none of them. The other is a signature cocktail list that reworks the classics with house-made ingredients: the Smoked Negroni, the Mezcalita, the Kyoto Cooler and the "Not a Sangria", a wine cocktail that plays on what visitors expect to order in Spain, are the ones that fly out. They also run small-group sessions where you mix your own cocktail behind the bar.
The music is their own choice and part of the evening, but low enough to talk over: this is a place for a quiet drink, not a party. It suits couples and small groups who want a proper drink in the old town without the noise of the bars around it; larger groups can book the whole room for private events of up to 30.
