Joel Baeza's small plates, with nods to starred kitchens

A room of about fifteen seats a step from Santa Catalina market, opened in early 2018 by Chilean chef Joel Baeza and his wife, Andrea Sertzen, who runs the floor. The name comes from stages: Baeza worked in some twenty kitchens, many of them starred, and the menu says so with tribute dishes to El Bulli, Comerç 24 or Dos Palillos. It's food for sharing, Latin American at heart and made with island produce: ceviche, Iberian pork gyozas, smoked tartare or the truffled egg. The menu changes with the seasons; this autumn, duck breast smoked to order with its jus and celeriac.
