Plaça de la Drassana, just behind La Llotja, is one of those little old-town squares that traffic doesn't reach, where tables stay in the sun until late. Vinito takes a corner with a terrace and a small, heavily decorated room inside, and it has made its name on one thing: vermouth. There are several house vermouths and others from outside bodegas, and the one almost everybody orders is the house vermouth topped with orange foam, which softens the bitterness and makes it very easy to drink; there's another with lemon foam, a barrel-aged one and cocktail spins such as the vermujito (with passion fruit) or the caipivermut. If you don't know where to start, there's a tasting of the four house vermouths. The wine list mixes Mallorca, the rest of Spain and the odd Argentine Malbec, and the staff recommend with ease; ask about the island wines, including a brisat (Mallorcan orange wine). To eat, it's mostly boards: cheeses, Iberian ham, preserves such as mussels en escabeche, plus a few hot things with an Argentine accent that suit vermouth very well: beef empanadas, provoleta with basil and a vermouth reduction, and baked camembert with honey and walnuts. The bread is made in-house. It isn't a place for a proper dinner but for a long late-afternoon drink or a pre-dinner aperitivo; a glass of wine isn't cheap by Palma standards, and what you're paying for is the square and the selection.
