The name comes from the fermented fish sauce of the Romans, and the house sums itself up in two ideas: market cooking and local produce, handled with modern technique. It sits on a street in the centre of Lloseta, the Raiguer village at the foot of the Serra de Tramuntana, and the thing that defines it is the tasting menu, which changes every month: a run of small courses that the owner, who runs the dining room, introduces one by one, explaining where each ingredient comes from (saffron from Menorca is one he particularly likes to show off). That front of house is its strong suit: the menu is adapted for vegetarians, coeliacs and allergies without fuss, and the regulars come back largely for the way they are looked after. There is also an à la carte menu, and occasionally paella. Bread arrives first with a homemade curry butter, charged separately; at the end, house herb liqueur or limoncello with the coffee. The dining room is bright and quiet, and in summer tables go out on the cobbled street. Many diners come from the rural hotels nearby with the menu booked through reception, and opinions among them are more mixed: if you want big portions, the tasting menu can feel light. For a quiet dinner inland, with thoughtful cooking and without coastal prices, it is a safe bet.
