Maca de Castro
Mallorcan recipes reimagined around produce from the chef’s gardens.
View in the app · free, no sign-upMacarena 'Maca' de Castro was scouring the island for scorpionfish (caproig), local shellfish, mare's milk and vegetables from her own gardens in Sa Pobla long before local produce became fashionable. Her fine-dining restaurant in Port d'Alcúdia holds a Michelin star, a Michelin Green Star and three Repsol Suns, and shares a building with Jardín Bistró, the family business where it all began in 1996. There's no à la carte: a single tasting menu of around ten courses that changes with the season and the harvest, Mallorcan cooking seen through contemporary technique, under the motto 'Eat close, go far'. What sets it apart from other starred tables is that her own vegetables take centre stage and technique never buries the produce: the dishes make sense. Desserts are the high point. The dining room is deliberately quiet, with no music, and some tables look into the kitchen. The menu costs €165 and the wine pairing, eight wines from Mallorca and mainland Spain, another €110. It's for a celebration and for diners who enjoy a very vegetable-led menu; anyone expecting big cuts of meat may leave wanting more.
