Plaça de s'Aigua is one of those small squares in the centre of Artà where locals sit out in the early evening, and at number 10 is the Baudot 1926 vermouth bar, run by the same house as the Casal d'Artà hotel around the corner. Inside there’s a bar, a few tables and a refurbished room with the feel of an old grocer’s; outside, the terrace on the square. You come at vermouth hour, and the interesting part is the list: lots of labels, Mallorcan vermouths among them, which the staff help you choose according to your taste, like an informal tasting. A house nibble arrives with your drink, and from there you graze: the steak tartare is the most ordered tapa, followed by meatballs, Baudot potatoes with truffle and parmesan, bread with homemade alioli and parmesan, or lomo de orza (pork loin preserved in oil) with potatoes. The pa amb oli comes their way, with the ingredients separate so you assemble it yourself, which doesn’t win everyone over. Portions are small for the price: it works better as a long aperitivo or a grazing dinner for two than for a hungry group. There are vegetarian and vegan options and a wine list that holds its own.
