The Cañellas Estrades family moved from Bunyola to Valldemossa in the 1920s and settled at number 4 on Carrer de la Rosa, where an old wood-fired oven became the heart of their bakery. That oven is still heated with pine branches, and out of it comes the thing the house is famous for: coca de patata, a soft, barely sweet potato bun dusted with sugar. It used to be baked in large pieces for village celebrations and has been sold as an individual bun since the 1960s. The third generation runs it today.

A few metres from the bakehouse, on Via Blanquerna, is the shop with tables, and behind it a quiet courtyard, which is where you want to sit with a coffee or a hot chocolate. Besides the potato coca there are ensaïmadas, plain or filled, quartos (a light sponge), a flourless almond gató and an apple tart baked every day. The calendar decides what's on the counter: sobrassada cocas at Carnival, bigger potato cocas and aniseed coca at Christmas, and meat pasties in sweet pastry at Easter.

It works like a village bakery that gets far more people than it can hold: you order at the counter, carry your own tray to the table, and at busy times there's a queue and the service can be curt. If you want to taste coca de patata at the house that made it famous, this is the stop; if you're after table service, know that before you go in.
